  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 stalks celery, diced
  • 1 tbsp chicken bouillon paste
  • 4 cup chicken broth
  • 4 cup water
  • 2 medium potatoes, diced
  • 2 medium carrots, diced
  • 1 can (10.5 oz) cream of celery soup
  • 1 tsp fresh thyme
  • 2 cup egg noodles

Instructions

  1. Season the chicken breasts with complete seasoning, garlic powder, onion powder, paprika, and black pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat and sear chicken breasts until golden brown, about 5-6 minutes per side, then remove from pot.
  3. Add butter to the same pot and sauté diced onions, bell peppers, and celery until fragrant and softened, about 5-7 minutes.
  4. Stir in the chicken bouillon paste, then pour in the chicken broth and water, scraping any browned bits from the bottom.
  5. Return the seared chicken to the pot and add diced potatoes, carrots, and the can of cream of celery; stir to combine.
  6. Bring the mixture to a gentle boil, then add the thyme and egg noodles.
  7. Simmer the soup for 10-15 minutes, or until the noodles are tender and the chicken is fully cooked through.
  8. Shred or dice the chicken before serving if preferred, and adjust seasoning with extra black pepper or all-purpose seasoning to taste.
