- 2 tbsp unsalted butter
- 1 medium onion, diced
- 1 medium bell pepper, diced
- 2 stalks celery, diced
- 1 tbsp chicken bouillon paste
- 4 cup chicken broth
- 4 cup water
- 2 medium potatoes, diced
- 2 medium carrots, diced
- 1 can (10.5 oz) cream of celery soup
- 1 tsp fresh thyme
- 2 cup egg noodles
Instructions
- Season the chicken breasts with complete seasoning, garlic powder, onion powder, paprika, and black pepper.
- Heat olive oil in a Dutch oven over medium-high heat and sear chicken breasts until golden brown, about 5-6 minutes per side, then remove from pot.
- Add butter to the same pot and sauté diced onions, bell peppers, and celery until fragrant and softened, about 5-7 minutes.
- Stir in the chicken bouillon paste, then pour in the chicken broth and water, scraping any browned bits from the bottom.
- Return the seared chicken to the pot and add diced potatoes, carrots, and the can of cream of celery; stir to combine.
- Bring the mixture to a gentle boil, then add the thyme and egg noodles.
- Simmer the soup for 10-15 minutes, or until the noodles are tender and the chicken is fully cooked through.
- Shred or dice the chicken before serving if preferred, and adjust seasoning with extra black pepper or all-purpose seasoning to taste.
