Garlic Confit Avocado Toast with Eggs by Soyoungpapiccio

Crispy flatbread topped with creamy avocado, jammy eggs, and aromatic garlic confit in chili oil.

Ingredients

  • 1 flatbread
  • 2 large eggs
  • 3 tbsp garlic confit (cloves and oil)
  • 1/2 ripe avocado, sliced
  • 1 tbsp chili oil
  • 1 tbsp vegetable oil
  • 1 tbsp fresh coriander, chopped
  • 1/2 tsp salt

Instructions

  1. Heat 1 tbsp vegetable oil in a small non-stick pan over medium heat.
  2. Crack the 2 eggs into the pan and cook for 3-4 minutes until the whites are set but the yolks remain runny.
  3. Toast the flatbread in a separate pan or toaster for 2 minutes until golden and crisp.
  4. Spread the mashed avocado over the warm flatbread and sprinkle with a pinch of salt until ready to serve.
  5. Arrange the cooked eggs on top of the avocado until ready to serve.
  6. Spoon the garlic confit cloves and oil over the eggs and drizzle with chili oil until ready to serve.
  7. Garnish with chopped fresh coriander before serving until ready to serve.
