Garlic Confit Avocado Toast with Eggs by Soyoungpapiccio
Crispy flatbread topped with creamy avocado, jammy eggs, and aromatic garlic confit in chili oil.

Ingredients
- 1 flatbread
- 2 large eggs
- 3 tbsp garlic confit (cloves and oil)
- 1/2 ripe avocado, sliced
- 1 tbsp chili oil
- 1 tbsp vegetable oil
- 1 tbsp fresh coriander, chopped
- 1/2 tsp salt
Instructions
- Heat 1 tbsp vegetable oil in a small non-stick pan over medium heat.
- Crack the 2 eggs into the pan and cook for 3-4 minutes until the whites are set but the yolks remain runny.
- Toast the flatbread in a separate pan or toaster for 2 minutes until golden and crisp.
- Spread the mashed avocado over the warm flatbread and sprinkle with a pinch of salt until ready to serve.
- Arrange the cooked eggs on top of the avocado until ready to serve.
- Spoon the garlic confit cloves and oil over the eggs and drizzle with chili oil until ready to serve.
- Garnish with chopped fresh coriander before serving until ready to serve.
