The Perfect Burger with potatoes bread flour and active dry yeast finished with fresh herbs and citrus.

Ingredients
- 1 lb potatoes, boiled and mashed
- 2 cup bread flour
- 1 tbsp active dry yeast
- 1 tsp sugar
- 1.5 tsp salt
- 1 egg, beaten (for egg wash)
- 1 tbsp sesame seeds
- 1/4 cup chopped pickles or cornichons
- 1/4 cup mayonnaise
- 2 tbsp ketchup
- 1 tsp dijon mustard
- 1.5 lb ground beef (chuck, short rib, brisket mix)
- 2 oz comte cheese, grated or sliced
- 1/2 tsp salt (for seasoning patties)
- 1/4 tsp black pepper (for seasoning patties)
Instructions
- For the buns: Combine mashed potatoes, flour, yeast, sugar, and salt. Knead until elastic, then let rise until doubled. Shape into balls, let rise again, brush with egg wash, sprinkle with sesame seeds, and bake until golden brown.
- For the sauce: Combine chopped pickles, mayonnaise, ketchup, and Dijon mustard in a bowl. Stir well.
- For the patties: Gently shape the ground beef into patties, being careful not to overwork the meat. Season generously on both sides with salt and pepper.
- Heat a pan over high heat until ripping hot. Add the burger patties and cook until golden brown on both sides and cooked to your desired doneness (about 3-4 minutes per side for medium-rare).
- Melt the Comte cheese over the patties in the last minute of cooking.
- Toast the inside of the buns in the beef fat left in the pan.
- Assemble the burgers: Place a patty with melted cheese on the bottom bun, top with sauce, and place the top bun.
