Air Fryer Salmon Patties by Skinnytaste

Easy air fryer salmon patties using leftover or canned salmon, seasoned with dill and Old Bay.

Ingredients

  • 2 large eggs
  • 1/4 cup chopped red onion
  • 1/4 cup chopped dill
  • 2 tbsp mayo
  • 2 tsp dijon mustard
  • 1 tsp old bay seasoning
  • 12 oz cooked or canned wild salmon, flaked
  • 1/2 cup panko, plain or gluten-free
  • 1 olive oil spray
  • 1 cup lemon wedges, for serving

Instructions

  1. Prepare the air fryer basket by lining it with parchment paper or spraying it with oil.
  2. In a medium bowl, combine the eggs, chopped red onion, chopped dill, mayo, Dijon mustard, and Old Bay seasoning. Mix well
  3. Add the flaked salmon and panko to the bowl and mix until just combined.
  4. Freeze the mixture for 10 minutes to help it hold its shape. If the mixture seems too wet, add an additional tablespoon of panko.
  5. Form the mixture into 6 evenly sized patties, pressing them firmly.
  6. Place the patties in the prepared air fryer basket.
  7. Air fry at 400°F (200°C) for 8 to 10 minutes, flipping halfway through, until golden brown and cooked through.
  8. Serve the salmon patties warm with lemon wedges, over a bed of greens, on buns, or in bowls.
