Air Fryer Salmon Patties by Skinnytaste

Easy air fryer salmon patties using leftover or canned salmon, seasoned with dill and Old Bay.

Ingredients
- 2 large eggs
- 1/4 cup chopped red onion
- 1/4 cup chopped dill
- 2 tbsp mayo
- 2 tsp dijon mustard
- 1 tsp old bay seasoning
- 12 oz cooked or canned wild salmon, flaked
- 1/2 cup panko, plain or gluten-free
- 1 olive oil spray
- 1 cup lemon wedges, for serving
Instructions
- Prepare the air fryer basket by lining it with parchment paper or spraying it with oil.
- In a medium bowl, combine the eggs, chopped red onion, chopped dill, mayo, Dijon mustard, and Old Bay seasoning. Mix well
- Add the flaked salmon and panko to the bowl and mix until just combined.
- Freeze the mixture for 10 minutes to help it hold its shape. If the mixture seems too wet, add an additional tablespoon of panko.
- Form the mixture into 6 evenly sized patties, pressing them firmly.
- Place the patties in the prepared air fryer basket.
- Air fry at 400°F (200°C) for 8 to 10 minutes, flipping halfway through, until golden brown and cooked through.
- Serve the salmon patties warm with lemon wedges, over a bed of greens, on buns, or in bowls.
