Creamy Avocado Pesto Pasta by Sinyasthecookingdad

Silky avocado-based pesto tossed with al dente pasta, finished with toasted pine nuts and garlic.

Ingredients

  • 250g pasta of choice
  • 1 large ripe avocado, pitted and peeled
  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 30g pine nuts
  • 1/2 tsp salt (adjust to taste)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente, about 8-10 minutes.
  2. Toast the pine nuts in a dry pan over medium heat for 3-5 minutes until golden brown, then set aside.
  3. Blend the avocado, minced garlic, olive oil, and salt in a food processor or blender until smooth and creamy.
  4. Drain the pasta, reserving 2 tablespoons of pasta water over medium heat until heated through, about 5 min.
  5. Toss the hot pasta with the avocado mixture in a large bowl, adding the reserved pasta water as needed to reach a creamy consistency over medium heat until heated through, about 5 min.
  6. Serve immediately topped with the toasted pine nuts until ready to serve.
