Greek Pasta Salad by Simply Recipes
vibrant Greek pasta salad packed with fresh produce and a tangy lemon olive oil dressing.

Ingredients
- 1/3 freshly squeezed lemon juice
- 1 lemon zest
- 2 garlic, finely chopped
- 2 finely chopped parsley
- 1/2 extra virgin olive oil
- 1/2 fresh oregano, optional
- 1/4 salt
- 1/4 pepper
- 1 rotini pasta, or other pasta shape of your choice
- 1/2 red onion, quartered and thinly sliced
- 1 red bell pepper, finely diced
- 1 cherry tomatoes, halved
- 1/2 pitted kalamata olives
- 1/2 crumbled feta
- 1 large cucumber, quartered and sliced
- 1/4 fresh parsley, roughly chopped
- 1/2 tsp salt and pepper to taste
Instructions
- Cook the pasta in a large pot of heavily salted boiling water until al dente. Immediately rinse in cold water until cool to the touch.
- Soak the sliced red onion in cold water with a pinch of salt for 10 minutes, then drain.
- In a small lidded jar, combine all dressing ingredients: lemon juice, lemon zest, garlic, parsley, olive oil, oregano (if using), salt, and pepper. Shake well and taste, adding more seasonings if desired.
- In a large bowl, combine the cooled pasta, drained red onion, red bell pepper, cherry tomatoes, Kalamata olives, feta, cucumber, and chopped parsley. Toss gently with 1/4 cup of the dressing. Add more dressing incrementally as needed. Season with salt and pepper to taste.
