Crispy toasted bread topped with a savory tomato sauce, smoky bacon, corn, and melted Swiss cheese.

Ingredients

  • 1 cup crushed tomato
  • 1/4 onion, finely diced
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 5 leaves fresh basil, chopped
  • 2 slices thick-cut bread
  • 2 strips bacon, cooked and chopped
  • 1/4 cup canned corn, drained
  • 1/4 cup green pepper, diced
  • 2 slices swiss cheese

Instructions

  1. Sauté the diced onion and minced garlic in a small pan over medium heat for 3-4 minutes until softened.
  2. Add the crushed tomato, salt, and sugar to the pan, simmering for 5-7 minutes until the sauce thickens slightly.
  3. Stir in the fresh basil and remove the sauce from the heat until ready to serve.
  4. Toast the bread slices lightly in a toaster or oven for 2 minutes to provide a firm base.
  5. Spread the prepared tomato sauce onto each slice of bread until ready to serve.
  6. Top with the chopped bacon, corn, green pepper, and a slice of Swiss cheese until ready to serve.
  7. Broil or bake in a preheated oven at 200°C (400°F) for 3-5 minutes until the cheese is melted and bubbling.
