Crispy baked tofu served with fresh cucumber and creamy avocado in a savory yogurt dressing.

Ingredients
- 1 block firm tofu
- 1 cucumber
- 1 avocado
- 2 tbsp red onion
- 1 cup cilantro
- 1 tbsp greek yogurt
- 1 tbsp olive oil
- 1 tbsp everything but the bagel seasoning
- 1 tsp chili flakes
- 1 tbsp lemon juice
Instructions
- Preheat oven to 425°F (220°C).
- Pat tofu dry, cut into cubes, and arrange on a parchment-lined baking sheet.
- Lightly brush or spray tofu with oil, sprinkle with garlic powder, and bake for 20–25 minutes, flipping halfway through, until golden and crispy.
- Combine sliced cucumber, cubed avocado, diced red onion, and chopped cilantro in a large bowl.
- Whisk together Greek yogurt, olive oil, bagel seasoning, chili flakes, and lemon juice to make the dressing
- Add the crispy tofu and dressing to the bowl, then toss gently to combine.
