Favorite High-Protein Crispy Tofu Salad by Shishisimple

Crispy baked tofu served with fresh cucumber and creamy avocado in a savory yogurt dressing.

Ingredients

  • 1 block firm tofu
  • 1 cucumber
  • 1 avocado
  • 2 tbsp red onion
  • 1 cup cilantro
  • 1 tbsp greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp everything but the bagel seasoning
  • 1 tsp chili flakes
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat tofu dry, cut into cubes, and arrange on a parchment-lined baking sheet.
  3. Lightly brush or spray tofu with oil, sprinkle with garlic powder, and bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  4. Combine sliced cucumber, cubed avocado, diced red onion, and chopped cilantro in a large bowl.
  5. Whisk together Greek yogurt, olive oil, bagel seasoning, chili flakes, and lemon juice to make the dressing
  6. Add the crispy tofu and dressing to the bowl, then toss gently to combine.
