2-Minute Microwave Soy Egg Rice Bowl by Shishisimple

Ingredients
- 2 eggs
- 1 bowl of cooked rice
- 2 tsp soy sauce
- 2 tsp mirin
- 1 tsp sesame oil
- 1 tbsp green onions, chopped
- 1 tsp white sesame seeds
- 2 sheets seaweed (optional for serving)
Instructions
- In a microwave-safe bowl, whisk together the soy sauce, mirin, and sesame oil
- Crack the 2 eggs directly into the sauce mixture.
- Use a fork to pierce the egg yolks thoroughly to prevent them from exploding in the microwave.
- Microwave on high for 1 minute 30 seconds to 2 minutes, checking for desired yolk doneness.
- Place the cooked egg mixture over a bowl of warm rice.
- Top with green onions and sesame seeds, then stir everything together and serve with seaweed if desired.
