2-Minute Microwave Soy Egg Rice Bowl by Shishisimple

Steamed rice topped with soy-marinated eggs, toasted sesame oil, and a sprinkle of fresh green onions.

Ingredients

  • 2 eggs
  • 1 bowl of cooked rice
  • 2 tsp soy sauce
  • 2 tsp mirin
  • 1 tsp sesame oil
  • 1 tbsp green onions, chopped
  • 1 tsp white sesame seeds
  • 2 sheets seaweed (optional for serving)

Instructions

  1. In a microwave-safe bowl, whisk together the soy sauce, mirin, and sesame oil
  2. Crack the 2 eggs directly into the sauce mixture.
  3. Use a fork to pierce the egg yolks thoroughly to prevent them from exploding in the microwave.
  4. Microwave on high for 1 minute 30 seconds to 2 minutes, checking for desired yolk doneness.
  5. Place the cooked egg mixture over a bowl of warm rice.
  6. Top with green onions and sesame seeds, then stir everything together and serve with seaweed if desired.
