Ingredients
- 1 cup blueberries (fresh or frozen)
- 4 tbsp granulated sugar (for filling)
- 1 tsp cornstarch
- 1/4 cup unsalted butter, softened
- 1/4 cup granulated sugar (for cobbler)
- 1/3 cup all-purpose flour
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 dash ground cinnamon
- 1 dash salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, toss the blueberries with 4 tablespoons of sugar and the cornstarch until evenly coated.
- Transfer the blueberry mixture into a small oven-safe skillet.
- In a separate bowl, cream together the butter and 1/4 cup of sugar until smooth.
- Stir in the flour, vanilla, baking powder, baking soda, cinnamon, and salt until a thick batter forms.
- Dollop the batter evenly over the blueberry mixture in the skillet.
- Bake for 30–40 minutes or until the top is golden brown and the filling is bubbling.
- Remove from the oven and let cool for 5 minutes before serving.
