Ingredients

  • 1 cup blueberries (fresh or frozen)
  • 4 tbsp granulated sugar (for filling)
  • 1 tsp cornstarch
  • 1/4 cup unsalted butter, softened
  • 1/4 cup granulated sugar (for cobbler)
  • 1/3 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 dash ground cinnamon
  • 1 dash salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, toss the blueberries with 4 tablespoons of sugar and the cornstarch until evenly coated.
  3. Transfer the blueberry mixture into a small oven-safe skillet.
  4. In a separate bowl, cream together the butter and 1/4 cup of sugar until smooth.
  5. Stir in the flour, vanilla, baking powder, baking soda, cinnamon, and salt until a thick batter forms.
  6. Dollop the batter evenly over the blueberry mixture in the skillet.
  7. Bake for 30–40 minutes or until the top is golden brown and the filling is bubbling.
  8. Remove from the oven and let cool for 5 minutes before serving.
