Caramelized onion pasta in a rich beef and Gruyère cream sauce with fresh rosemary aromatics.

Ingredients

  • 3 yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 1 tsp italian seasoning
  • 1 tbsp fresh rosemary, chopped
  • 10 oz pasta of choice
  • 3 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup gruyère cheese, grated
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)

Instructions

  1. Melt butter in a large skillet over medium heat, add sliced onions, and cook for 20-25 minutes, stirring occasionally, until deeply caramelized and golden brown.
  2. Stir in the Italian seasoning, chopped rosemary, salt, and pepper, cooking for 1 minute until fragrant.
  3. Add the beef broth to the skillet and bring to a simmer over medium-high heat.
  4. Add the dry pasta directly to the skillet and cook for 10-12 minutes, or until the pasta is al dente and most of the liquid has been absorbed.
  5. Reduce heat to low, stir in the heavy cream and grated Gruyère, and cook for 2-3 minutes until the cheese is melted and the sauce is creamy.
  6. Serve immediately while hot, topped with extra cheese if desired.
