Sausage & Cheese Oatcakes by Sepps

Savory oatcakes folded with plant-based sausage and melted cheese, finished with a touch of tangy ketchup.

Ingredients
- 4 oatcakes
- 2 cooked plant-based sausages, sliced or crumbled
- 1 cup shredded plant-based cheese
- 2 tbsp ketchup (tomato sauce)
- 1 tbsp vegetable oil
Instructions
- If using uncooked sausages, cook them according to package directions until browned and heated through. Slice or crumble the cooked sausages.
- Heat the vegetable oil in a large non-stick pan or griddle over medium heat.
- Place the oatcakes in the hot pan and warm for 1-2 minutes per side, until pliable and lightly toasted.
- On one half of each warmed oatcake, spread a thin layer of ketchup. Top with a portion of the sliced plant-based sausage and shredded plant-based cheese.
- Fold the empty half of the oatcake over the filling, creating a half-moon shape. Continue to cook for 2-3 minutes, or until the cheese is melted and bubbly and the oatcake is heated through.
- Carefully remove from the pan and serve immediately. Repeat with remaining oatcakes and fillings.
