Sausage & Cheese Oatcakes by Sepps

Savory oatcakes folded with plant-based sausage and melted cheese, finished with a touch of tangy ketchup.

Ingredients

  • 4 oatcakes
  • 2 cooked plant-based sausages, sliced or crumbled
  • 1 cup shredded plant-based cheese
  • 2 tbsp ketchup (tomato sauce)
  • 1 tbsp vegetable oil

Instructions

  1. If using uncooked sausages, cook them according to package directions until browned and heated through. Slice or crumble the cooked sausages.
  2. Heat the vegetable oil in a large non-stick pan or griddle over medium heat.
  3. Place the oatcakes in the hot pan and warm for 1-2 minutes per side, until pliable and lightly toasted.
  4. On one half of each warmed oatcake, spread a thin layer of ketchup. Top with a portion of the sliced plant-based sausage and shredded plant-based cheese.
  5. Fold the empty half of the oatcake over the filling, creating a half-moon shape. Continue to cook for 2-3 minutes, or until the cheese is melted and bubbly and the oatcake is heated through.
  6. Carefully remove from the pan and serve immediately. Repeat with remaining oatcakes and fillings.
