Nonna's 10-Minute Garlic Pasta by Sepps

Spaghetti tossed in a fragrant garlic and chili oil sauce, finished with fresh parsley and parmesan cheese.

Ingredients
- 200g (7 oz) spaghetti or preferred pasta
- 3 cloves garlic, crushed
- 1 tsp chili flakes
- 1/4 cup good quality olive oil
- 1/4 cup fresh parsley, chopped
- 1/2 tsp salt, plus more for pasta water
- 1/4 cup parmesan cheese, grated (for serving)
Instructions
- Cook pasta in a large pot of salted boiling water according to package directions until al dente, about 8-10 minutes. Before draining, reserve 1 cup of the pasta water.
- While the pasta cooks, in a large heatproof bowl, combine the crushed garlic, chili flakes, olive oil, and 1/2 tsp salt.
- Add the hot, drained pasta directly to the bowl with the garlic mixture. Pour in about 1/2 cup of the reserved pasta water and toss vigorously to coat, adding more pasta water as needed to create a light, emulsified sauce
- Stir in the fresh chopped parsley. Serve immediately, topped with grated Parmesan cheese.
