Dairy-Free Pistachio, Cherry, and Chocolate Trifle by Sepps

Chocolate cake layered with vegan custard, fresh cherries, and crushed pistachios in a chilled dessert trifle.

Ingredients
- 0.5 pack chocolate cake mix
- 1.5 packs vegan jelly
- 800g vegan custard
- 2 tbsp cherry pomegranate chia fruit spread
- 250g cherries, pitted and halved
- 250ml plant-based double cream
- 100g pistachios, crushed
- 50g dark chocolate, chopped
Instructions
- Prepare the chocolate cake mix according to package directions and bake until a toothpick comes out clean, about 25-30 minutes; let cool completely.
- Prepare the vegan jelly by dissolving in hot water as directed on the package; pour into a trifle dish and refrigerate until fully set, about 2 hours.
- Layer the cooled chocolate cake over the set jelly layer.
- Pour the vegan custard over the cake layer, spreading evenly.
- Dot the cherry chia spread and fresh cherries into the custard layer.
- Whip the plant-based double cream until soft peaks form and spread over the top.
- Garnish with crushed pistachios, additional fresh cherries, and chopped dark chocolate before serving.
