Dairy-Free Pistachio, Cherry, and Chocolate Trifle by Sepps

Chocolate cake layered with vegan custard, fresh cherries, and crushed pistachios in a chilled dessert trifle.

Ingredients

  • 0.5 pack chocolate cake mix
  • 1.5 packs vegan jelly
  • 800g vegan custard
  • 2 tbsp cherry pomegranate chia fruit spread
  • 250g cherries, pitted and halved
  • 250ml plant-based double cream
  • 100g pistachios, crushed
  • 50g dark chocolate, chopped

Instructions

  1. Prepare the chocolate cake mix according to package directions and bake until a toothpick comes out clean, about 25-30 minutes; let cool completely.
  2. Prepare the vegan jelly by dissolving in hot water as directed on the package; pour into a trifle dish and refrigerate until fully set, about 2 hours.
  3. Layer the cooled chocolate cake over the set jelly layer.
  4. Pour the vegan custard over the cake layer, spreading evenly.
  5. Dot the cherry chia spread and fresh cherries into the custard layer.
  6. Whip the plant-based double cream until soft peaks form and spread over the top.
  7. Garnish with crushed pistachios, additional fresh cherries, and chopped dark chocolate before serving.
