Smokey Chicken Cheese Kababs by Sehers Foodiary
Tender spiced chicken mince kebabs infused with a smoky aroma and a molten cheese center.

Ingredients
- 500g (1.1 lb) boneless chicken, ground
- 1 medium onion, finely chopped
- 1/2 red bell pepper, finely diced
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 2 green chilies, finely chopped
- 1/4 cup fresh coriander, chopped
- 100g (3.5 oz) mozzarella cheese, shredded
- 1 tsp salt (adjust to taste)
- 1 tsp red chili powder
- 1 tsp garam masala
- 2 tbsp oil (for shallow frying)
- 1 piece charcoal (for smoking)
Instructions
- Combine ground chicken, onion, red bell pepper, ginger, garlic, green chilies, coriander, and spices in a large bowl; mix thoroughly until well combined.
- Take a small portion of the mixture, flatten it in your palm, place a spoonful of cheese in the center, and fold the meat around it to form a ball or cylinder over medium heat until heated through, about 5 min.
- Heat oil in a non-stick pan over medium heat and shallow fry the kebabs for 8-10 minutes, turning occasionally until golden brown and cooked through.
- Place a small piece of foil in the center of the pan, add a piece of red-hot charcoal, drizzle with a few drops of oil, and cover the pan immediately for 3-5 minutes to infuse a smoky flavor.
