Crunchy Biscoff cookies dipped in a creamy, caramelized white chocolate and Biscoff spread coating.

Ingredients
- 1.5 sticks unsalted butter, room temperature
- 0.25 cup dark brown sugar
- 1 tsp vanilla extract
- 0.25 cup maple syrup
- 1.5 cup all-purpose flour
- 1.25 cup crushed biscoff cookies
- 0.5 tsp baking powder
- 0.5 tsp baking soda
- 0.75 tsp kosher salt
- 2 tbsp whole milk
- 1.5 cup white chocolate melting wafers
- 0.25 cup biscoff spread
Instructions
- Cream together butter, brown sugar, vanilla extract, and maple syrup until smooth.
- Whisk flour, crushed Biscoff, baking powder, baking soda, and salt in a separate bowl
- Combine dry ingredients into the butter mixture, then add milk and mix until a dough forms.
- Roll out the dough to 3/8 inch thickness on a floured surface and cut into 2-inch rounds.
- Bake at 325°F until lightly golden brown, about 10-12 minutes.
- Melt chocolate wafers in the microwave in short bursts, stirring frequently until 75% melted, then stir until smooth.
- Stir Biscoff spread into the melted chocolate until fully incorporated.
- Dip cooled cookies into the chocolate mixture, drain excess, and set on parchment-lined tray to harden.
