Ingredients

  • 1.5 sticks unsalted butter, room temperature
  • 0.25 cup dark brown sugar
  • 1 tsp vanilla extract
  • 0.25 cup maple syrup
  • 1.5 cup all-purpose flour
  • 1.25 cup crushed biscoff cookies
  • 0.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.75 tsp kosher salt
  • 2 tbsp whole milk
  • 1.5 cup white chocolate melting wafers
  • 0.25 cup biscoff spread

Instructions

  1. Cream together butter, brown sugar, vanilla extract, and maple syrup until smooth.
  2. Whisk flour, crushed Biscoff, baking powder, baking soda, and salt in a separate bowl
  3. Combine dry ingredients into the butter mixture, then add milk and mix until a dough forms.
  4. Roll out the dough to 3/8 inch thickness on a floured surface and cut into 2-inch rounds.
  5. Bake at 325°F until lightly golden brown, about 10-12 minutes.
  6. Melt chocolate wafers in the microwave in short bursts, stirring frequently until 75% melted, then stir until smooth.
  7. Stir Biscoff spread into the melted chocolate until fully incorporated.
  8. Dip cooled cookies into the chocolate mixture, drain excess, and set on parchment-lined tray to harden.
