Flaky puff pastry rectangles filled with sweet strawberry jam and topped with a smooth vanilla glaze.

Ingredients

  • 1 sheet refrigerated puff pastry
  • 1/2 cup strawberry filling or jam
  • 1 large egg, whisked (for egg wash, optional)
  • 1.5 cup powdered sugar
  • 3 tbsp milk (or water/heavy cream)
  • 1 tsp vanilla extract (optional)
  • 1 tbsp colored sugar crystals (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Unroll the sheet of puff pastry onto a lightly floured surface. Cut the pastry sheet in half lengthwise, then cut each half into three equal rectangles, creating six rectangles in total.
  3. Place a tablespoon of strawberry filling in the center of three of the pastry rectangles, leaving a border around the edges.
  4. Carefully place the remaining three pastry rectangles over the filled ones. Use a fork to press firmly around all edges to seal the pop tarts.
  5. If desired, whisk the egg in a small bowl and brush the tops of the pop tarts with the egg wash for a golden, crispy finish.
  6. Transfer the pop tarts to the prepared baking sheet and bake for 12-15 minutes, or until the pastry is puffed and golden brown.
  7. While the pop tarts bake, prepare the glaze: In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract (if using) until smooth. If the glaze is too thick, add more milk a teaspoon at a time; if too thin, add more powdered sugar.
  8. Once baked, remove the pop tarts from the oven and let them cool slightly on the baking sheet. Drizzle generously with the prepared glaze and immediately sprinkle with colored sugar crystals, if desired.
  9. Serve warm or at room temperature.
