- Pour the hot syrup into the egg whites in a slow, steady stream while beating continuously on high speed.
- Continue beating the mixture for 5-8 minutes until it loses its glossy sheen and holds its shape when dropped from a spoon.
- Fold in the vanilla extract and chopped pecans quickly.
- Drop spoonfuls of the mixture onto parchment-lined baking sheets and let set at room temperature for 1 hour until firm.
