Ingredients

  • 2 1/2 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites, room temperature
  • 1 tsp vanilla extract
  • 1 cup pecans, chopped

Instructions

  1. Combine sugar, corn syrup, and water in a medium saucepan over medium heat, stirring until sugar dissolves.
  2. Attach a candy thermometer to the pan and boil without stirring until the mixture reaches 260°F (hard-ball stage), about 15-20 minutes.
  3. Beat egg whites in a clean bowl with an electric mixer on medium-high speed until stiff peaks form while the syrup cooks.
  4. Pour the hot syrup into the egg whites in a slow, steady stream while beating continuously on high speed.
  5. Continue beating the mixture for 5-8 minutes until it loses its glossy sheen and holds its shape when dropped from a spoon.
  6. Fold in the vanilla extract and chopped pecans quickly.
  7. Drop spoonfuls of the mixture onto parchment-lined baking sheets and let set at room temperature for 1 hour until firm.
