Ingredients
- 2 cup pecans, chopped
- 4 tbsp (1/2 stick) butter, melted
- 16 oz (2 packages) cream cheese, softened
- 8 oz pimento cheese spread
- 1/4 small onion, finely diced
- 20 oz crushed pineapple, drained and squeezed dry
- 1/2 tsp granulated garlic
- 1/2 tsp kosher salt (plus more for pecans)
Instructions
- Preheat oven to 350°F (175°C).
- Toss pecans with melted butter and a light dusting of salt on a baking sheet; bake for 15 minutes, stirring every 5 minutes until golden, then cool completely.
- Combine cream cheese, pimento cheese, onion, drained pineapple, garlic, and salt in a bowl; mix until well incorporated.
- Form the mixture into 32 small, individual balls and refrigerate until firm, about 20-30 minutes.
- Finely chop the cooled toasted pecans.
- Roll each chilled cheese ball in the chopped pecans until fully coated, then serve.
