Creamy pimento cheese bites rolled in toasted, salted pecans for a perfect party appetizer.

Ingredients

  • 2 cup pecans, chopped
  • 4 tbsp (1/2 stick) butter, melted
  • 16 oz (2 packages) cream cheese, softened
  • 8 oz pimento cheese spread
  • 1/4 small onion, finely diced
  • 20 oz crushed pineapple, drained and squeezed dry
  • 1/2 tsp granulated garlic
  • 1/2 tsp kosher salt (plus more for pecans)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Toss pecans with melted butter and a light dusting of salt on a baking sheet; bake for 15 minutes, stirring every 5 minutes until golden, then cool completely.
  3. Combine cream cheese, pimento cheese, onion, drained pineapple, garlic, and salt in a bowl; mix until well incorporated.
  4. Form the mixture into 32 small, individual balls and refrigerate until firm, about 20-30 minutes.
  5. Finely chop the cooled toasted pecans.
  6. Roll each chilled cheese ball in the chopped pecans until fully coated, then serve.
