Serves: 30Prep: 45 minCook: 15 min

Ingredients

  • 3 cup powdered sugar
  • 1 1/3 cup creamy peanut butter
  • 10 tbsp (1 stick plus 2 tbsp) unsalted butter, melted
  • 1 1/2 tsp kosher salt
  • 16 oz chocolate candy coating or melting wafers
  • 1 tsp flaky sea salt (for garnish)

Instructions

  1. Sift 3 cups of powdered sugar into a large mixing bowl.
  2. Add 1 1/3 cups of peanut butter, 1 1/2 teaspoons of kosher salt, and the melted butter to the bowl.
  3. Mix on low speed using a paddle attachment until the mixture reaches a pliable, dough-like consistency that holds together when pressed.
  4. Use a small scoop to portion the mixture into 30 balls, leaving them with a flat edge, and place them on parchment paper.
  5. Let the peanut butter balls sit at room temperature for 1 hour to dry slightly.
  6. Melt the chocolate coating in a microwave-safe bowl using 15-30 second pulses, stirring thoroughly between each interval until smooth.
  7. Dip the base of each ball into the chocolate and place back on parchment paper; let sit for 10-15 minutes until the bottoms harden.
  8. Dip the entire ball into the remaining chocolate, tapping off excess, and place on a tray to set.
  9. Sprinkle with a pinch of sea salt while the chocolate is still wet and allow to harden completely before serving.
