Double-fried shoestring potatoes with a perfect crispy exterior and fluffy, tender interior for the ultimate snack.

Ingredients
- 4 large russet potatoes
- 2 tbsp white vinegar
- 2 l neutral frying oil
- 1 tsp kosher salt
Instructions
- Peel and cut potatoes into shoestring strips using a mandoline or knife.
- Rinse cut potatoes under cold water, then submerge in an ice water bath for 10 minutes.
- Bring a large pot of water to a boil, add vinegar, and boil potatoes for 6 minutes until bendable but not breaking.
- Drain potatoes and rinse with cold water to stop the cooking process
- Spread potatoes on a paper towel-lined sheet pan and freeze for 1 hour to remove moisture.
- Heat oil to 300°F (150°C) and fry potatoes in batches until they float, about 3-4 minutes.
- Remove potatoes and drain on a wire rack; increase oil temperature to 375°F (190°C).
- Fry potatoes a second time until golden brown and crispy, about 2-3 minutes.
- Remove from oil, drain briefly, and sprinkle with salt immediately while hot
