Fluffy, nutty pancakes made with freshly milled flour and finished with optional chocolate chip inclusions.

Ingredients

  • 250g (2 cup) freshly milled flour
  • 50g (1/4 cup) sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 480ml (2 cup) milk
  • 60g (1/4 cup) butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  2. Combine the melted butter, milk, egg, and vanilla in a separate bowl, then stir into the dry ingredients until just combined.
  3. Let the batter rest for 20 minutes to allow the freshly milled flour to hydrate.
  4. Preheat a griddle or non-stick skillet to 350°F (175°C) and lightly grease with butter.
  5. Pour 1/2 cup of batter onto the hot griddle for each pancake.
  6. Sprinkle chocolate chips onto the surface once bubbles begin to form on the top of the batter, about 2-3 minutes.
  7. Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through.
