Fresh Milled Flour Pancakes by Savoryspoonnc
Fluffy, nutty pancakes made with freshly milled flour and finished with optional chocolate chip inclusions.

Ingredients
- 250g (2 cup) freshly milled flour
- 50g (1/4 cup) sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 480ml (2 cup) milk
- 60g (1/4 cup) butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Combine the melted butter, milk, egg, and vanilla in a separate bowl, then stir into the dry ingredients until just combined.
- Let the batter rest for 20 minutes to allow the freshly milled flour to hydrate.
- Preheat a griddle or non-stick skillet to 350°F (175°C) and lightly grease with butter.
- Pour 1/2 cup of batter onto the hot griddle for each pancake.
- Sprinkle chocolate chips onto the surface once bubbles begin to form on the top of the batter, about 2-3 minutes.
- Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through.
