Ingredients

  • 2/3 cup refined coconut oil
  • 1 lb mini marshmallows
  • 8 cup crispy rice cereal
  • 2 tbsp sprinkles (optional)
  • 1 tsp cooking spray (for pan)

Instructions

  1. Grease a 9x13 inch baking pan with cooking spray and set aside.
  2. Melt the coconut oil in a large pot over medium-low heat until completely liquid.
  3. Add the mini marshmallows to the pot and stir constantly until mostly melted, leaving just a few small clumps.
  4. Remove the pot from the heat and immediately add the crispy rice cereal.
  5. Fold the cereal into the marshmallow mixture gently until just combined, being careful not to over-mix to maintain fluffiness.
  6. Transfer the mixture into the prepared pan and spread it out evenly without pressing down, keeping it light and airy.
  7. Top with sprinkles if desired and let cool for at least 15-20 minutes before cutting and serving.
