Ingredients
- 2/3 cup refined coconut oil
- 1 lb mini marshmallows
- 8 cup crispy rice cereal
- 2 tbsp sprinkles (optional)
- 1 tsp cooking spray (for pan)
Instructions
- Grease a 9x13 inch baking pan with cooking spray and set aside.
- Melt the coconut oil in a large pot over medium-low heat until completely liquid.
- Add the mini marshmallows to the pot and stir constantly until mostly melted, leaving just a few small clumps.
- Remove the pot from the heat and immediately add the crispy rice cereal.
- Fold the cereal into the marshmallow mixture gently until just combined, being careful not to over-mix to maintain fluffiness.
- Transfer the mixture into the prepared pan and spread it out evenly without pressing down, keeping it light and airy.
- Top with sprinkles if desired and let cool for at least 15-20 minutes before cutting and serving.
