Flaky, twice-baked croissants filled with a sweet, fragrant almond cream and topped with toasted almonds.

Ingredients
- 4 stale croissants (1-2 days old)
- 1/2 cup granulated sugar (for syrup)
- 1/2 cup water (for syrup)
- 1/2 cup almond milk (for filling)
- 56g (2 oz) unsalted butter, room temperature
- 1/4 cup granulated sugar (for filling)
- 1 large egg
- 1 tsp almond extract
- 1/2 cup sliced almonds
- 1 tbsp powdered sugar (for dusting)
Instructions
- Combine 1/2 cup sugar and 1/2 cup water in a small pot over medium heat, stirring until sugar dissolves, then remove from heat and let cool.
- Whisk together almond milk, room temperature butter, 1/4 cup sugar, egg, and almond extract in a bowl until light and fluffy.
- Slice the croissants in half horizontally and arrange them on a baking sheet.
- Brush the cut sides of the croissants generously with the prepared sugar syrup.
- Spread a thick layer of the almond filling onto the bottom halves, replace the tops, and spread a little extra filling over the tops.
- Sprinkle sliced almonds over the filled croissants and bake at 350°F (175°C) for 15 minutes until golden brown.
- Remove from oven and finish with a dusting of powdered sugar before serving.
