Midnight Mushroom Pasta by Sautewithshiv

Sautéed earthy mushrooms tossed with al dente pasta in a simple, savory olive oil glaze.

Ingredients

  • 250g (9 oz) pasta of choice
  • 300g (10 oz) cremini or button mushrooms, sliced
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente.
  2. Heat olive oil in a large pan over medium heat.
  3. Add sliced mushrooms to the pan and sauté for 6-8 minutes until they sweat and turn golden brown.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Drain the pasta, reserving 1/4 cup of pasta water, and add the pasta directly to the pan with the mushrooms over medium heat until heated through, about 5 min.
  6. Toss everything together, adding the reserved pasta water if needed to create a light sauce, and season with salt and pepper over medium heat until heated through, about 5 min.
  7. Garnish with fresh parsley and serve immediately until ready to serve.
