Spinach & Cheese Egg White Breakfast Quesadilla by Sarahaven

Crispy flour tortilla filled with fluffy egg whites, melted mozzarella cheese, and fresh chopped spinach.

Ingredients

  • 1 flour tortilla
  • 0.5 cup liquid egg whites
  • 0.33 cup mozzarella cheese, grated
  • 0.33 cup spinach, chopped
  • 1 tsp avocado oil spray
  • 0.25 tsp red pepper flakes
  • 0.25 tsp sea salt
  • 0.25 tsp black pepper

Instructions

  1. Heat a medium-sized skillet over low heat and lightly grease with avocado oil spray.
  2. Pour in the egg whites and cook for 1-2 minutes until the edges are set.
  3. Place the tortilla directly on top of the cooking eggs and cook for 1 minute.
  4. Loosen the edges with a spatula, carefully flip the entire assembly, and season the egg side with salt, pepper, and red pepper flakes.
  5. Add the grated cheese and chopped spinach to one half of the egg-covered tortilla.
  6. Fold the tortilla in half over the filling and cook for another 1-2 minutes until the exterior is golden and crispy.
