One-Pan Salmon Boursin Pasta by Sarahaven

Creamy baked salmon and Boursin cheese pasta tossed with blistered tomatoes, fresh spinach, and bright lemon.

Ingredients
- 18 oz salmon fillets (3 pieces, 6 oz each)
- 5.3 oz boursin cheese (1 round)
- 1 pint grape or cherry tomatoes
- 3 cup fresh spinach
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp fresh cracked pepper
- 3 cup cooked pasta (approx. 8 oz dry)
- 1/2 cup grated parmesan cheese
- 1 whole lemon, juiced
Instructions
- Preheat your oven to 400°F (200°C).
- Place the salmon fillets, Boursin cheese, tomatoes, spinach, garlic, dried basil, salt, and pepper into an oven-safe baking dish.
- Bake for 20 minutes, or until the salmon is cooked through and tomatoes have softened and burst.
- Remove from the oven, add the cooked pasta, parmesan cheese, and lemon juice to the pan.
- Stir everything together until the cheese and juices form a creamy sauce, then serve immediately.
