One-Pan Salmon Boursin Pasta by Sarahaven

Creamy baked salmon and Boursin cheese pasta tossed with blistered tomatoes, fresh spinach, and bright lemon.

Ingredients

  • 18 oz salmon fillets (3 pieces, 6 oz each)
  • 5.3 oz boursin cheese (1 round)
  • 1 pint grape or cherry tomatoes
  • 3 cup fresh spinach
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp fresh cracked pepper
  • 3 cup cooked pasta (approx. 8 oz dry)
  • 1/2 cup grated parmesan cheese
  • 1 whole lemon, juiced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the salmon fillets, Boursin cheese, tomatoes, spinach, garlic, dried basil, salt, and pepper into an oven-safe baking dish.
  3. Bake for 20 minutes, or until the salmon is cooked through and tomatoes have softened and burst.
  4. Remove from the oven, add the cooked pasta, parmesan cheese, and lemon juice to the pan.
  5. Stir everything together until the cheese and juices form a creamy sauce, then serve immediately.
