Thai Green Curry Moules-Frites by Sam Way

Steamed mussels in a fragrant, creamy green curry sauce served with crispy golden French fries.

Ingredients

  • 1 kg (2.2 lb) fresh mussels, cleaned and debearded
  • 3 tbsp thai green curry paste
  • 400 ml (1 can) full-fat coconut milk
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar (or brown sugar)
  • 2 kaffir lime leaves, torn
  • 1 stalk lemongrass, bruised
  • 1 tbsp vegetable oil
  • 500 g (1.1 lb) frozen french fries, prepared according to package
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the French fries according to the package instructions until crispy and golden brown.
  2. Heat vegetable oil in a large pot over medium heat; add the green curry paste and cook for 1-2 minutes until fragrant.
  3. Stir in the coconut milk, fish sauce, palm sugar, lime leaves, and lemongrass; bring to a gentle simmer for 3-5 minutes.
  4. Add the cleaned mussels to the pot and cover with a tight-fitting lid.
  5. Steam the mussels for 5-7 minutes, shaking the pot occasionally, until all shells have opened.
  6. Discard any mussels that remain closed, garnish with fresh cilantro, and serve immediately with the crispy fries.
