Thai Green Curry Moules-Frites by Sam Way

Steamed mussels in a fragrant, creamy green curry sauce served with crispy golden French fries.

Ingredients
- 1 kg (2.2 lb) fresh mussels, cleaned and debearded
- 3 tbsp thai green curry paste
- 400 ml (1 can) full-fat coconut milk
- 2 tbsp fish sauce
- 1 tbsp palm sugar (or brown sugar)
- 2 kaffir lime leaves, torn
- 1 stalk lemongrass, bruised
- 1 tbsp vegetable oil
- 500 g (1.1 lb) frozen french fries, prepared according to package
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Prepare the French fries according to the package instructions until crispy and golden brown.
- Heat vegetable oil in a large pot over medium heat; add the green curry paste and cook for 1-2 minutes until fragrant.
- Stir in the coconut milk, fish sauce, palm sugar, lime leaves, and lemongrass; bring to a gentle simmer for 3-5 minutes.
- Add the cleaned mussels to the pot and cover with a tight-fitting lid.
- Steam the mussels for 5-7 minutes, shaking the pot occasionally, until all shells have opened.
- Discard any mussels that remain closed, garnish with fresh cilantro, and serve immediately with the crispy fries.
