No-Broth Cornish Hen by Saltsensitive

Tender Cornish hen steamed in its own juices with aromatic ginger, crisp apple, and garden vegetables.

Ingredients

  • 1 cornish hen
  • 1 apple, sliced
  • 4 napa cabbage leaves, chopped
  • 4 daikon slices, quartered
  • 1 inch fresh ginger, sliced
  • 2 tbsp hoisin sauce (for serving)

Instructions

  1. Place the chopped Napa cabbage, daikon slices, sliced apple, and ginger at the bottom of a heavy-bottomed pot.
  2. Place the Cornish hen directly on top of the vegetable and fruit bed.
  3. Cover the pot with a tight-fitting lid and cook over low heat for 45-50 minutes.
  4. Check that the hen is cooked through (internal temperature of 165°F/74°C) and that the vegetables have released enough liquid to create a broth.
  5. Serve the hen with a side of hoisin sauce for dipping and steamed rice.
