Yogurt and Cream Cheese Cake by Sabrineguelbi

Light and airy yogurt cake enriched with creamy fromage frais for a delicate texture.

Ingredients

  • 125g (1/2 cup) plain yogurt
  • 125g (1/2 cup) cream cheese or fromage frais
  • 200g (1 cup) granulated sugar
  • 3 large eggs
  • 250g (2 cup) all-purpose flour
  • 11g (1 tbsp) baking powder
  • 80ml (1/3 cup) neutral oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a standard cake pan.
  2. Whisk the eggs and sugar in a large bowl for 3-4 minutes until the mixture is pale and slightly frothy.
  3. Fold in the yogurt and cream cheese until smooth and fully combined.
  4. Stir in the oil and vanilla extract until incorporated.
  5. Sift the flour and baking powder into the wet mixture and stir gently until just combined, being careful not to overmix.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
