Crispy Fried Tinned Sardines by Runandeatwithjack
Delicate, golden-fried sardine fillets served with a sharp onion tartar sauce and bright pickled peppers.

Ingredients
- 1 tin (approx 120g) sardines in oil, drained
- 1/2 cup all-purpose flour
- 1 cup breadcrumbs
- 1/2 cup mayonnaise
- 2 tbsp onion, finely diced
- 1 tbsp capers, chopped
- 1/2 cup pickled peppers, sliced
- 1 lemon, cut into wedges
- 1/2 tsp salt, plus more for seasoning
- 1/4 tsp black pepper
- 1 cup neutral oil for frying
Instructions
- Prepare the tartar sauce by combining mayonnaise, finely diced onion, and chopped capers in a small bowl; stir well and set aside.
- Set up a breading station with two shallow bowls: one with seasoned flour (salt and pepper) and one with breadcrumbs.
- Gently coat each sardine fillet in flour, shaking off excess, then press gently into the breadcrumbs to coat thoroughly over medium heat until heated through, about 5 min.
- Heat the oil in a small skillet over medium-high heat until shimmering, about 3-4 minutes.
- Fry the sardines in batches for 1-2 minutes per side until golden and crisp, being careful not to break the delicate fillets.
- Transfer the fried sardines to a paper towel-lined plate, dust immediately with a pinch of salt, and serve hot with the tartar sauce, pickled peppers, and lemon wedges over medium heat until heated through, about 5 min.
