Roasted sweet potato stuffed with savory diced chicken, crispy bacon, creamy cheese, and spicy hot honey.

Ingredients

  • 1 large sweet potato
  • 4 oz chicken thighs, cooked and diced
  • 2 tbsp whipped cream cheese
  • 2 slices bacon, cooked and crumbled
  • 1 tbsp hot honey
  • 1 tbsp cashews, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potato with a fork several times and bake for 45-50 minutes until tender when pierced with a knife.
  3. While the potato bakes, cook the chicken thighs and bacon in a skillet until fully browned and cooked through.
  4. Slice the cooked sweet potato down the middle and fluff the inside with a fork.
  5. Spread the whipped cream cheese into the center of the hot potato.
  6. Top with the diced chicken, crumbled bacon, and chopped cashews.
  7. Drizzle with hot honey before serving while warm.
