Roasted sweet potato stuffed with savory diced chicken, crispy bacon, creamy cheese, and spicy hot honey.

Ingredients
- 1 large sweet potato
- 4 oz chicken thighs, cooked and diced
- 2 tbsp whipped cream cheese
- 2 slices bacon, cooked and crumbled
- 1 tbsp hot honey
- 1 tbsp cashews, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce the sweet potato with a fork several times and bake for 45-50 minutes until tender when pierced with a knife.
- While the potato bakes, cook the chicken thighs and bacon in a skillet until fully browned and cooked through.
- Slice the cooked sweet potato down the middle and fluff the inside with a fork.
- Spread the whipped cream cheese into the center of the hot potato.
- Top with the diced chicken, crumbled bacon, and chopped cashews.
- Drizzle with hot honey before serving while warm.
