Loaded BBQ Chicken Sweet Potato by Rileysstupidrecipes

Roasted sweet potato stuffed with spiced chicken and bacon, finished with a chipotle honey glaze.

Ingredients
- 1 large sweet potato
- 2 boneless skinless chicken thighs
- 2 pieces center cut bacon, cooked and crumbled
- 4 tbsp whipped cream cheese
- 2 tbsp crushed almonds
- 2 tbsp chipotle hot sauce
- 1 tbsp hot honey
- 2 tbsp avocado oil
- 2 tbsp bbq rub
Instructions
- Poke several holes in the sweet potato with a fork, wrap in a damp paper towel, and microwave for 8 minutes until tender.
- Coat the cooked potato with 1 tbsp of avocado oil and a generous sprinkling of BBQ rub, then air fry at 400°F for 10 minutes until the skin is crispy.
- Season the chicken thighs with BBQ rub and a light spray of avocado oil, then air fry at 400°F for 12-14 minutes until cooked through and golden.
- Whisk together the chipotle hot sauce and hot honey in a small bowl to create the sauce
- Split the potato open, stuff with the whipped cream cheese, top with chopped air-fried chicken, crumbled bacon, and crushed almonds, then drizzle with the prepared sauce.
