Lemony Mediterranean Doner Kebab Wraps by Reemaislam

Spiced beef mince kebabs with a tangy feta-cucumber tzatziki and sweet pomegranate molasses in a wrap.

Ingredients
- 500g (1.1 lb) beef mince
- 1 medium onion, finely grated
- 1 tbsp tomato puree
- 1 tsp lemon zest
- 2 tbsp yogurt
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup yogurt (for tzatziki)
- 1/2 cucumber, diced (for tzatziki)
- 50g (2 oz) feta cheese, crumbled
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh mint, chopped
- 1 tsp garlic puree
- 1 tsp honey
- 1 tbsp lemon juice
- 4 large tortillas
- 2 tbsp pomegranate molasses
- 1 red onion, thinly sliced and tossed with sumac (for layering)
Instructions
- Preheat oven to 200°C (400°F).
- Combine beef mince, onion, tomato puree, lemon zest, 2 tbsp yogurt, and all dry spices in a bowl; mix thoroughly.
- Spread meat mixture into a very thin, even layer on a parchment-lined baking sheet.
- Bake for 15-20 minutes until the meat is browned and cooked through.
- Whisk together the remaining yogurt, cucumber, feta, dill, mint, garlic puree, honey, and lemon juice to make the tzatziki sauce.
- Slice the cooked meat into strips.
- Assemble by spreading tzatziki on a tortilla, then layering with meat, sumac-seasoned onions, fresh salad, and a drizzle of pomegranate molasses.
- Roll tightly and pan-sear for 1-2 minutes per side until the wrap is golden and crisp.
