Lemony Mediterranean Doner Kebab Wraps by Reemaislam

Spiced beef mince kebabs with a tangy feta-cucumber tzatziki and sweet pomegranate molasses in a wrap.

Ingredients

  • 500g (1.1 lb) beef mince
  • 1 medium onion, finely grated
  • 1 tbsp tomato puree
  • 1 tsp lemon zest
  • 2 tbsp yogurt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup yogurt (for tzatziki)
  • 1/2 cucumber, diced (for tzatziki)
  • 50g (2 oz) feta cheese, crumbled
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh mint, chopped
  • 1 tsp garlic puree
  • 1 tsp honey
  • 1 tbsp lemon juice
  • 4 large tortillas
  • 2 tbsp pomegranate molasses
  • 1 red onion, thinly sliced and tossed with sumac (for layering)

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Combine beef mince, onion, tomato puree, lemon zest, 2 tbsp yogurt, and all dry spices in a bowl; mix thoroughly.
  3. Spread meat mixture into a very thin, even layer on a parchment-lined baking sheet.
  4. Bake for 15-20 minutes until the meat is browned and cooked through.
  5. Whisk together the remaining yogurt, cucumber, feta, dill, mint, garlic puree, honey, and lemon juice to make the tzatziki sauce.
  6. Slice the cooked meat into strips.
  7. Assemble by spreading tzatziki on a tortilla, then layering with meat, sumac-seasoned onions, fresh salad, and a drizzle of pomegranate molasses.
  8. Roll tightly and pan-sear for 1-2 minutes per side until the wrap is golden and crisp.
