Homemade Doner Kebab by Reemaislam

Spiced ground beef loaf roasted until crispy, served in warm pita with creamy garlic sauce.

Ingredients

  • 900g (2 lb) ground beef (20% fat)
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried oregano
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 pita bread
  • 1 cup plain greek yogurt
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Combine ground beef with garlic powder, onion powder, oregano, paprika, cumin, salt, and pepper in a large bowl, kneading thoroughly for 5 minutes until the texture is very tacky and uniform.
  3. Form the meat mixture into a tight, smooth log shape and wrap it tightly in aluminum foil, twisting the ends to seal.
  4. Place the meat log on a baking sheet and bake for 60 minutes until firm.
  5. Remove from the oven, unwrap, and let the meat rest for 15 minutes before slicing into thin strips.
  6. Sear the meat strips in a hot skillet for 2-3 minutes per side until the edges are crispy.
  7. Whisk together yogurt, minced garlic, and lemon juice in a small bowl for the sauce.
  8. Assemble the kebabs by tucking the crispy meat strips into warm pita bread and drizzling with the garlic yogurt sauce.
