Ingredients

  • 2 burger fillets
  • 2 large eggs
  • 300g (10 oz) potatoes, cubed, skin-on
  • 1 tbsp olive oil
  • 1 tsp honey
  • 1/2 tsp chili flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 head lettuce, chopped
  • 1/2 red onion, finely diced
  • 1/2 cup sweetcorn
  • 2 tbsp pickled jalapenos
  • 2 tbsp pomegranate seeds
  • 2 tbsp parmesan cheese, shaved
  • 2 tbsp salad dressing of choice

Instructions

  1. Preheat your air fryer to 200°C (400°F).
  2. Toss the cubed potatoes with olive oil, honey, chili flakes, salt, and pepper until evenly coated.
  3. Place the seasoned potatoes, burger fillets, and eggs into the air fryer basket, ensuring they are arranged to cook evenly over medium heat until softened, about 5 min.
  4. Air fry for 15-20 minutes, or until the potatoes are golden and crispy and the burger fillets are cooked through.
  5. While the main components cook, prepare the salad base by tossing the chopped lettuce, diced red onion, sweetcorn, and jalapenos in a large bowl with your preferred dressing over medium heat until softened, about 5 min.
  6. Assemble the bowls by spooning the salad mixture into the base, then topping with the air-fried burger fillets, potatoes, and hard-boiled eggs.
  7. Garnish with fresh pomegranate seeds and shaved parmesan before serving.
