Ingredients
- 1 lb cooked shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1/4 cup red onion, finely diced
- 2 tbsp fresh parsley, chopped
- 1/2 cup mayonnaise
- 2 tbsp sour cream
- 1 tbsp lime juice
- 1 clove garlic, minced
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Add the mayonnaise, sour cream, lime juice, minced garlic, paprika, black pepper, and salt to a large bowl, then whisk until smooth, about 1 minute.
- Fold in the cooked shrimp, diced avocados, red onion, and parsley until everything is evenly coated, about 1 minute.
- Chill the salad for 10 to 15 minutes if you want it extra cold, or serve right away for the freshest avocado texture.
- Taste and adjust with a little more salt, pepper, or lime juice before serving.
