Ingredients
- 300g (10.5 oz) short pasta (like penne or fusilli)
- 2 large yellow onions, thinly sliced
- 1 head garlic, cloves peeled and smashed
- 1/4 cup olive oil, divided
- 4 cup vegetable broth (or water)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup grated parmesan cheese, plus more for serving
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 200°C (400°F).
- In a large oven-safe baking dish (approx. 9x13 inches), combine the thinly sliced onions, peeled and smashed garlic cloves, and 2 tablespoons of olive oil. Toss well to coat.
- Roast for 20-25 minutes, stirring once halfway through, until the onions are softened and beginning to caramelize and the garlic is fragrant.
- Carefully remove the tray from the oven. Add the uncooked pasta, remaining 2 tablespoons of olive oil, salt, black pepper, and red pepper flakes (if using). Pour in the vegetable broth, ensuring the pasta is mostly submerged.
- Cover the baking dish tightly with aluminum foil. Return to the oven and bake for 18-20 minutes, or until the pasta is al dente and most of the liquid has been absorbed.
- Remove the foil. Stir in the 1/2 cup of grated Parmesan cheese until it melts and creates a creamy sauce.
- Serve immediately, garnished with fresh chopped parsley and additional Parmesan cheese if desired.
