Convenient and flavorful pasta dish featuring sweet caramelized onions and tender roasted garlic, all baked together in a single tray.

Ingredients

  • 300g (10.5 oz) short pasta (like penne or fusilli)
  • 2 large yellow onions, thinly sliced
  • 1 head garlic, cloves peeled and smashed
  • 1/4 cup olive oil, divided
  • 4 cup vegetable broth (or water)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup grated parmesan cheese, plus more for serving
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large oven-safe baking dish (approx. 9x13 inches), combine the thinly sliced onions, peeled and smashed garlic cloves, and 2 tablespoons of olive oil. Toss well to coat.
  3. Roast for 20-25 minutes, stirring once halfway through, until the onions are softened and beginning to caramelize and the garlic is fragrant.
  4. Carefully remove the tray from the oven. Add the uncooked pasta, remaining 2 tablespoons of olive oil, salt, black pepper, and red pepper flakes (if using). Pour in the vegetable broth, ensuring the pasta is mostly submerged.
  5. Cover the baking dish tightly with aluminum foil. Return to the oven and bake for 18-20 minutes, or until the pasta is al dente and most of the liquid has been absorbed.
  6. Remove the foil. Stir in the 1/2 cup of grated Parmesan cheese until it melts and creates a creamy sauce.
  7. Serve immediately, garnished with fresh chopped parsley and additional Parmesan cheese if desired.
