Ingredients

  • 8 oz (225 g) spaghetti or pasta of choice
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 4 garlic cloves, minced
  • 2 tbsp chili crisp, plus more for serving
  • 1 cup cream or coconut milk, room temperature
  • 1 tbsp soy sauce, optional
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • Salted water, for boiling pasta
  • 1/4 cup reserved pasta water, as needed
  • 1 tbsp chopped fresh parsley, optional

Instructions

  1. Heat the butter and olive oil in a large skillet over medium heat, then add the sliced onion and cook for 15–20 minutes, stirring occasionally, until golden and jammy.
  2. Meanwhile, bring a pot of salted water to a boil and cook the pasta until al dente, about 8–10 minutes; reserve 1/4 cup pasta water, then drain.
  3. Stir the minced garlic, paprika, garlic powder, salt, pepper, and Italian seasoning into the onions and cook for 1 minute until fragrant.
  4. Add the chili crisp and sauté for 1 minute, then pour in the cream or coconut milk and simmer for 2–3 minutes until slightly thickened.
  5. Stir in the Parmesan cheese and optional soy sauce, then cook for 1 minute until the sauce looks glossy and cohesive.
  6. Add the drained pasta and toss for 1–2 minutes until fully coated, loosening with reserved pasta water a splash at a time if needed.
  7. Serve hot with extra chili crisp on top and parsley if desired.
