Buckeye Bars by Recime

Creamy peanut butter bars topped with a smooth chocolate shell and optional sea salt.

Ingredients
- 1 cup creamy peanut butter
- 1 stick butter, softened
- 1 tsp vanilla extract
- 2 1/2 cups powdered sugar, do not pack
- 2 cups chocolate chips
- 2 tbsp coconut oil, optional
- 1/4 tsp sea salt, optional
Instructions
- Line a 9x9-inch baking dish with parchment paper, leaving overhang for lifting, about 5 minutes.
- Beat the peanut butter and softened butter on medium speed until thoroughly combined and smooth, about 2 minutes.
- Mix in the vanilla, then add the powdered sugar slowly on low speed until a soft ball forms, 1-2 minutes.
- Press the peanut butter mixture firmly into the lined pan in an even layer, reaching the corners, about 3 minutes.
- Microwave the chocolate chips and coconut oil in 30-second bursts, stirring between each, until melted and smooth, about 1 minute total.
- Spread the melted chocolate evenly over the peanut butter layer, then refrigerate until the chocolate is fully hardened, about 2 hours.
- Sprinkle with sea salt, if desired, then slice into bars once set.
