Spicy Mutton Curry by Radhiiarora

Tender pieces of mutton simmered in a fragrant, spiced onion and tomato masala gravy.

Ingredients
- 500g (1.1 lb) mutton, cut into bite-sized pieces
- 3 medium onions, finely diced
- 2 large tomatoes, chopped
- 2 tbsp ginger-garlic paste
- 1/2 cup yogurt, whisked
- 1 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1 tsp garam masala
- 3 tbsp mustard oil or vegetable oil
- 1 tsp cumin seeds
- 2 cup water
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat the oil in a large heavy-bottomed pot or pressure cooker over medium heat and add cumin seeds until they sizzle.
- Add the diced onions and sauté for 8-10 minutes until they turn golden brown.
- Stir in the ginger-garlic paste and cook for 2 minutes until the raw smell disappears.
- Add the chopped tomatoes, turmeric, chili powder, and coriander powder; cook for 5-7 minutes until the tomatoes soften and oil separates.
- Add the mutton pieces and sear on high heat for 5-8 minutes until browned on all sides.
- Reduce heat, stir in the yogurt, and mix well to combine over medium heat until heated through, about 5 min.
- Add 2 cups of water, cover, and simmer on low heat for 45-50 minutes (or 4-5 whistles in a pressure cooker) until the meat is tender.
- Sprinkle with garam masala and fresh cilantro before serving hot until ready to serve.
