Spicy Mutton Curry by Radhiiarora

Tender pieces of mutton simmered in a fragrant, spiced onion and tomato masala gravy.

Ingredients

  • 500g (1.1 lb) mutton, cut into bite-sized pieces
  • 3 medium onions, finely diced
  • 2 large tomatoes, chopped
  • 2 tbsp ginger-garlic paste
  • 1/2 cup yogurt, whisked
  • 1 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • 3 tbsp mustard oil or vegetable oil
  • 1 tsp cumin seeds
  • 2 cup water
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the oil in a large heavy-bottomed pot or pressure cooker over medium heat and add cumin seeds until they sizzle.
  2. Add the diced onions and sauté for 8-10 minutes until they turn golden brown.
  3. Stir in the ginger-garlic paste and cook for 2 minutes until the raw smell disappears.
  4. Add the chopped tomatoes, turmeric, chili powder, and coriander powder; cook for 5-7 minutes until the tomatoes soften and oil separates.
  5. Add the mutton pieces and sear on high heat for 5-8 minutes until browned on all sides.
  6. Reduce heat, stir in the yogurt, and mix well to combine over medium heat until heated through, about 5 min.
  7. Add 2 cups of water, cover, and simmer on low heat for 45-50 minutes (or 4-5 whistles in a pressure cooker) until the meat is tender.
  8. Sprinkle with garam masala and fresh cilantro before serving hot until ready to serve.
