Jamaican Easter Spice Bun by Racquels Caribbean Cuisine
Spiced fruit loaf enriched with stout and malta, traditionally served with slices of savory cheddar cheese.

Ingredients
- 6.5 cup all-purpose flour
- 1 bottle stout or malta
- 1 bottle malta
- 2 cup sugar
- 0.25 cup melted butter
- 2 eggs, beaten
- 2 tbsp browning
- 1 tbsp lime zest
- 0.25 cup guava jam
- 1 tbsp vanilla essence
- 2 tbsp baking powder
- 1 tsp salt
- 1 tsp grated nutmeg
- 2 tsp cinnamon powder
- 1 tsp mixed spice
- 0.5 cup raisins
- 0.25 cup chopped cherries
- 0.5 cup mixed peels
Instructions
- Preheat oven to 350°F and grease two 9-inch loaf pans.
- In a large container, combine the stout, malta, sugar, melted butter, beaten eggs, lime zest, browning, vanilla essence, and guava jam; whisk until dissolved.
- Stir in the mixed peels, cherries, and raisins.
- In a separate bowl, sift together the flour, salt, baking powder, cinnamon, mixed spice, and nutmeg.
- Gradually incorporate the dry ingredients into the wet mixture, stirring until smooth and well combined.
- Pour batter into the prepared pans, filling about 3/4 full, and top with extra fruit if desired.
- Bake for 1 hour or until a toothpick inserted into the center comes out clean.
- Remove from oven and brush the tops with melted butter for a glossy finish; allow to cool before slicing.
