Jamaican Easter Spice Bun by Racquels Caribbean Cuisine

Spiced fruit loaf enriched with stout and malta, traditionally served with slices of savory cheddar cheese.

Ingredients

  • 6.5 cup all-purpose flour
  • 1 bottle stout or malta
  • 1 bottle malta
  • 2 cup sugar
  • 0.25 cup melted butter
  • 2 eggs, beaten
  • 2 tbsp browning
  • 1 tbsp lime zest
  • 0.25 cup guava jam
  • 1 tbsp vanilla essence
  • 2 tbsp baking powder
  • 1 tsp salt
  • 1 tsp grated nutmeg
  • 2 tsp cinnamon powder
  • 1 tsp mixed spice
  • 0.5 cup raisins
  • 0.25 cup chopped cherries
  • 0.5 cup mixed peels

Instructions

  1. Preheat oven to 350°F and grease two 9-inch loaf pans.
  2. In a large container, combine the stout, malta, sugar, melted butter, beaten eggs, lime zest, browning, vanilla essence, and guava jam; whisk until dissolved.
  3. Stir in the mixed peels, cherries, and raisins.
  4. In a separate bowl, sift together the flour, salt, baking powder, cinnamon, mixed spice, and nutmeg.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until smooth and well combined.
  6. Pour batter into the prepared pans, filling about 3/4 full, and top with extra fruit if desired.
  7. Bake for 1 hour or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and brush the tops with melted butter for a glossy finish; allow to cool before slicing.
