Crispy golden Caribbean fritters filled with savory flaked saltfish, aromatic onions, garlic, and fresh herbs.

Ingredients

  • 340g (3/4 lb) saltfish (codfish), boiled and minced
  • 3 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 1 tsp all-purpose seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp turmeric or curry powder (optional)
  • 1/2 tsp salt (adjust to taste)
  • 1.25 cup water
  • 1 medium onion, finely minced
  • 3 cloves garlic, finely minced
  • 2 stalks green onion, finely minced
  • 1 tbsp fresh thyme, finely minced
  • 2 pimento or bell peppers, finely minced
  • 2 cup vegetable oil (for frying)

Instructions

  1. Boil the saltfish in water for 10 minutes to remove excess salt, then drain, debone, and mince into small flakes.
  2. Whisk the flour, baking powder, sugar, all-purpose seasoning, black pepper, turmeric/curry, and salt in a large bowl until well combined.
  3. Gradually add 1.25 cups of water to the flour mixture, whisking constantly until the batter is smooth, thick, and lump-free.
  4. Fold the prepared saltfish, minced onion, garlic, scallion, thyme, and peppers into the batter until evenly distributed.
  5. Heat the cooking oil in a deep pan or pot over medium-high heat until shimmering.
  6. Drop spoonfuls of batter into the hot oil, ensuring they do not touch, and fry for 2 minutes per side until golden brown and crispy.
  7. Remove the fritters with a slotted spoon and drain on a paper towel-lined plate before serving
