Hand-rolled fresh egg pasta with a delicate, silky texture perfect for any classic Italian sauce.

Ingredients

  • 1 cup flour
  • 2 large eggs

Instructions

  1. Mound the flour on a clean work surface and create a deep well in the center until ready to serve.
  2. Crack the eggs into the well and beat them gently with a fork, gradually incorporating the flour from the inner walls until ready to serve.
  3. Knead the dough by hand for 8-10 minutes until smooth, elastic, and uniform in texture.
  4. Wrap the dough tightly in plastic wrap and let it rest at room temperature for 30 minutes to relax the gluten.
  5. Roll the dough out thinly using a rolling pin or pasta machine to your desired thickness until ready to serve.
  6. Cut the pasta into preferred shapes and cook in a large pot of salted boiling water for 2-3 minutes until al dente.
