Briny mixed olives infused with aromatic garlic, fresh lemon zest, and a blend of Mediterranean herbs.

Ingredients
- 300g (10 oz) mixed pitted olives
- 1/2 cup extra virgin olive oil
- 3 cloves garlic, thinly sliced
- 1 tbsp lemon zest
- 1 tbsp fresh rosemary, finely chopped
- 1 tsp red pepper flakes
Instructions
- Combine the olive oil, sliced garlic, lemon zest, rosemary, and red pepper flakes in a small bowl.
- Add the olives and toss thoroughly until they are coated in the marinade.
- Transfer to a jar or airtight container and marinate at room temperature for at least 1 hour.
- Serve at room temperature with toothpicks, or spoon over an antipasto platter.
