Primo's Marinated Leeks with Stracciatella by Primo Nyc

Tender braised leeks in a tangy lemon marinade, served over creamy stracciatella with honey and sourdough.

Ingredients
- 12 large leeks, cleaned and trimmed
- 4 cloves garlic, smashed
- 2 medium shallots, halved
- 3 strips lemon peel
- 4 sprigs fresh thyme
- 1 cup extra virgin olive oil
- 1 cup water
- 1/4 cup meyer lemon vinegar
- 1 lb stracciatella cheese
- 1 tsp black pepper, freshly cracked
- 2 tbsp honey
- 1 loaf sourdough bread, toasted
Instructions
- Place cleaned leeks, garlic, shallots, lemon peel, and thyme in a large braising pan.
- Add olive oil and water to the pan until the leeks are partially submerged.
- Braise over low heat for 30-40 minutes, turning occasionally, until the leeks are tender and translucent.
- Remove from heat, stir in the Meyer lemon vinegar, and allow the leeks to marinate in the liquid for at least 30 minutes.
- Spread the stracciatella cheese onto a serving platter and top with the marinated leeks.
- Drizzle with honey, sprinkle with black pepper, and serve alongside toasted sourdough.
