Primo's Marinated Leeks with Stracciatella by Primo Nyc

Tender braised leeks in a tangy lemon marinade, served over creamy stracciatella with honey and sourdough.

Ingredients

  • 12 large leeks, cleaned and trimmed
  • 4 cloves garlic, smashed
  • 2 medium shallots, halved
  • 3 strips lemon peel
  • 4 sprigs fresh thyme
  • 1 cup extra virgin olive oil
  • 1 cup water
  • 1/4 cup meyer lemon vinegar
  • 1 lb stracciatella cheese
  • 1 tsp black pepper, freshly cracked
  • 2 tbsp honey
  • 1 loaf sourdough bread, toasted

Instructions

  1. Place cleaned leeks, garlic, shallots, lemon peel, and thyme in a large braising pan.
  2. Add olive oil and water to the pan until the leeks are partially submerged.
  3. Braise over low heat for 30-40 minutes, turning occasionally, until the leeks are tender and translucent.
  4. Remove from heat, stir in the Meyer lemon vinegar, and allow the leeks to marinate in the liquid for at least 30 minutes.
  5. Spread the stracciatella cheese onto a serving platter and top with the marinated leeks.
  6. Drizzle with honey, sprinkle with black pepper, and serve alongside toasted sourdough.
