Marinated Fava Beans and Spring Peas by Primo Nyc

Crisp fava beans and sweet spring peas in a bright marinade, topped with creamy stracciatella cheese.

Ingredients
- 250g (9 oz) fresh fava beans, shelled
- 250g (9 oz) fresh spring peas, shelled
- 200g (7 oz) stracciatella cheese
- 3 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1/4 cup fresh mint leaves, torn
- 1/2 tsp red chili flakes
- 1/2 tsp flaky sea salt
Instructions
- Bring a large pot of salted water to a boil and prepare an ice bath in a separate bowl.
- Blanch the fava beans and peas together for 2-3 minutes until bright green and tender-crisp.
- Drain the vegetables immediately and plunge them into the ice bath for 3 minutes to stop the cooking.
- Remove the outer skins from the fava beans if desired for a more tender texture.
- Whisk the olive oil, lemon juice, salt, and chili flakes in a small bowl to create the marinade.
- Toss the blanched vegetables in the marinade, then fold in half of the fresh mint.
- Spread the stracciatella on a serving plate, top with the marinated vegetables, and garnish with the remaining mint.
