Marinated Fava Beans and Spring Peas by Primo Nyc

Crisp fava beans and sweet spring peas in a bright marinade, topped with creamy stracciatella cheese.

Ingredients

  • 250g (9 oz) fresh fava beans, shelled
  • 250g (9 oz) fresh spring peas, shelled
  • 200g (7 oz) stracciatella cheese
  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1/4 cup fresh mint leaves, torn
  • 1/2 tsp red chili flakes
  • 1/2 tsp flaky sea salt

Instructions

  1. Bring a large pot of salted water to a boil and prepare an ice bath in a separate bowl.
  2. Blanch the fava beans and peas together for 2-3 minutes until bright green and tender-crisp.
  3. Drain the vegetables immediately and plunge them into the ice bath for 3 minutes to stop the cooking.
  4. Remove the outer skins from the fava beans if desired for a more tender texture.
  5. Whisk the olive oil, lemon juice, salt, and chili flakes in a small bowl to create the marinade.
  6. Toss the blanched vegetables in the marinade, then fold in half of the fresh mint.
  7. Spread the stracciatella on a serving plate, top with the marinated vegetables, and garnish with the remaining mint.
