Classic Oatmeal Scotchies by Preppykitchen
Chewy, golden-brown oatmeal cookies studded with sweet butterscotch chips and a hint of warm cinnamon.

Ingredients
- 225g (1 cup) unsalted butter, softened
- 200g (1 cup) packed light brown sugar
- 100g (1/2 cup) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 190g (1.5 cup) all-purpose flour
- 1 tsp baking soda
- 0.5 tsp salt
- 0.5 tsp ground cinnamon
- 270g (3 cup) old-fashioned rolled oats
- 340g (2 cup) butterscotch chips
Instructions
- Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper.
- Cream together softened butter, brown sugar, and granulated sugar in a large bowl until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract, mixing until smooth.
- Whisk together flour, baking soda, salt, and cinnamon in a separate medium bowl
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the rolled oats and butterscotch chips using a spatula
- Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart
- Bake for 10-12 minutes or until edges are golden brown but centers remain slightly soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
