Classic Oatmeal Scotchies by Preppykitchen

Chewy, golden-brown oatmeal cookies studded with sweet butterscotch chips and a hint of warm cinnamon.

Ingredients

  • 225g (1 cup) unsalted butter, softened
  • 200g (1 cup) packed light brown sugar
  • 100g (1/2 cup) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 190g (1.5 cup) all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon
  • 270g (3 cup) old-fashioned rolled oats
  • 340g (2 cup) butterscotch chips

Instructions

  1. Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. Cream together softened butter, brown sugar, and granulated sugar in a large bowl until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, followed by the vanilla extract, mixing until smooth.
  4. Whisk together flour, baking soda, salt, and cinnamon in a separate medium bowl
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the rolled oats and butterscotch chips using a spatula
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart
  8. Bake for 10-12 minutes or until edges are golden brown but centers remain slightly soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
