Easy Mexican Street Corn with Canned Corn by Powerhouseplates
quick and easy Mexican street corn recipe using canned corn for a shortcut elote.

Ingredients
- 2 cans corn, drained
- 2 tbsp butter
- 1/4 cup mayonnaise
- 1/2 cup cotija cheese, crumbled
- 1 tsp chili powder or tajín
- 1/2 tsp (adjust to taste) salt
- 2 tbsp fresh chopped cilantro
Instructions
- Sauté the drained canned corn in butter in a skillet over medium-high heat for 5-7 minutes, until slightly charred.
- Reduce heat to low. Stir in the mayonnaise, 1/2 cup crumbled Cotija cheese, chili powder or Tajín, and salt to taste.
- Stir until everything is well combined and heated through, about 1-2 minutes.
- Serve warm, topped with extra crumbled Cotija cheese and fresh chopped cilantro.
