Easy Mexican Street Corn with Canned Corn by Powerhouseplates

quick and easy Mexican street corn recipe using canned corn for a shortcut elote.

Ingredients

  • 2 cans corn, drained
  • 2 tbsp butter
  • 1/4 cup mayonnaise
  • 1/2 cup cotija cheese, crumbled
  • 1 tsp chili powder or tajín
  • 1/2 tsp (adjust to taste) salt
  • 2 tbsp fresh chopped cilantro

Instructions

  1. Sauté the drained canned corn in butter in a skillet over medium-high heat for 5-7 minutes, until slightly charred.
  2. Reduce heat to low. Stir in the mayonnaise, 1/2 cup crumbled Cotija cheese, chili powder or Tajín, and salt to taste.
  3. Stir until everything is well combined and heated through, about 1-2 minutes.
  4. Serve warm, topped with extra crumbled Cotija cheese and fresh chopped cilantro.
