Tender air-fried carrots glazed in a rich, sweet maple butter reduction for a perfect roast accompaniment.

Ingredients

  • 300g carrots, peeled and halved if thick
  • 50g unsalted butter, melted
  • 50g maple syrup
  • 1 tbsp olive oil (for spraying)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper (adjust to taste)
  • 1/2 tsp flaky sea salt (for garnish)

Instructions

  1. Place the carrots into the air fryer basket and spray lightly with olive oil, then season with salt and pepper.
  2. Roast in the air fryer at 180°C (350°F) for 10 minutes until they begin to soften.
  3. Whisk together the melted butter and maple syrup in a large mixing bowl while the carrots roast.
  4. Remove the carrots from the air fryer, toss them thoroughly in the maple butter mixture, and return them to the basket along with any remaining glaze.
  5. Cook for an additional 10–15 minutes at 180°C (350°F) until the carrots are tender and the glaze is bubbling and slightly caramelized.
  6. Transfer to a serving dish, drizzle with any extra butter from the basket, and sprinkle with a pinch of flaky sea salt.
