Maple Butter Air Fryer Carrots by Poppycooks

Tender air-fried carrots glazed in a rich, sweet maple butter reduction for a perfect roast accompaniment.

Ingredients
- 300g carrots, peeled and halved if thick
- 50g unsalted butter, melted
- 50g maple syrup
- 1 tbsp olive oil (for spraying)
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper (adjust to taste)
- 1/2 tsp flaky sea salt (for garnish)
Instructions
- Place the carrots into the air fryer basket and spray lightly with olive oil, then season with salt and pepper.
- Roast in the air fryer at 180°C (350°F) for 10 minutes until they begin to soften.
- Whisk together the melted butter and maple syrup in a large mixing bowl while the carrots roast.
- Remove the carrots from the air fryer, toss them thoroughly in the maple butter mixture, and return them to the basket along with any remaining glaze.
- Cook for an additional 10–15 minutes at 180°C (350°F) until the carrots are tender and the glaze is bubbling and slightly caramelized.
- Transfer to a serving dish, drizzle with any extra butter from the basket, and sprinkle with a pinch of flaky sea salt.
